Place chicken, Brussels sprouts, and baby potatoes on a large sheet pan and drizzle with the lemon herb mixture. Toss to coat evenly and arrange in a single layer on the pan. Season with salt and pepper to taste. Roast for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender. Serve and enjoy!

Place salmon, baby carrots, parsnips, and red onion on a large sheet pan and drizzle with olive oil. Toss to coat the vegetables evenly and arrange in a single layer around the salmon. Season with salt and pepper to taste. Roast for 15 minutes, then brush the salmon with the balsamic glaze. Continue roasting for an additional 5-7 minutes, or until salmon flakes easily with a fork and vegetables are tender. Serve and enjoy!
