Super Easy Broiled Coconut Shrimp

I’ve been craving shrimp lately and wanted to share this super yummy recipe that makes me happy….

Ingredients

  • 2 large eggs 
  • 1.25 cup  unsweetened shredded coconut
  • 1 lime, juiced and zested
  • 1 pound 31/35 count (large) shrimp, remove the tails – peel and devein 
  • 1/2 tsp Sea salt
  • 1/2 tsp freshly ground black pepper
  • 6-inch skewers

Preheat broiler. You’ll need a baking sheet with a wire rack to make sure the shrimp turn out as crisp as possible.

Whisk the eggs. Pour mixture into a shallow dish.

In another shallow dish, combine coconut, lime, salt and pepper.

Dip each shrimp into the eggs and then coat with the coconut/lime mixture.

Skewer the shrimp – you should be able to fit 3-4 shrimp per skewer.

Place the skewers on the rack on the baking sheet and broil for 2 minutes. Flip the skewers over and cook for another 1-2 minutes – until the shrimp are cooked through. Remove from the oven.

These are amazing as is – but you may want to try the dipping sauce below…..

Orange Dipping Sauce:

½ cup no-sugar, juice-sweetened orange marmalade
2 tsp preservative free mustard
1 tsp horseradish
Dash of sea salt

Mix all ingredients in a small bowl.

Dip.
